Apple and Sweet Potato Casserole

4 medium sweet potatoes
3 large apples, Honeycrisp or Gala
½ cup brown sugar
½ cup water
¼ tsp cinnamon
¼ tsp salt
⅓ cup raisins
⅓ cup dried cranberries (craisins)
⅓ cup chopped walnuts or pecans
2 Tbsp butter
3 Tbsp flour

Preheat oven to 350°F. Lightly grease a 4 quart casserole dish, or a 9"x15" baking dish.

Peel the sweet potatoes and cut them into cubes, approximately 3/4" square. Peel and core the apples. Cut them into cubes, the same size as the sweet potatoes.

In the baking dish combine the diced sweet potates and apples.

In a medium saucepan over medium heat, mix together the brown sugar, ⅓ cup of the water, cinnamon, raisins, dried cranberries, butter and salt. Cook for 5 minutes. Remove from heat and add the chopped walnuts.

In a small bowl, stir together remaining water and the flour. Whisk until smooth. Combine with the brown sugar mixture. Pour over the sweet potatoes and apples.

Bake covered in the preheated oven for 30 minutes. Uncover and continue baking an additional 20-30 minutes, or until the sweet potatoes and apples are tender.
