Broccoli Chicken Divan

2 lb. chicken breasts
24 oz. broccoli florets, fresh or frozen
1 can condensed cream of broccoli soup
½ cup milk
¾ cup sharp cheddar cheese, shredded
1 Tbsp. Mrs. Dash Garlic & Herb seasoning
1 cup colby jack cheese, shredded
4 Tbsp. butter
⅔ cup Panko style bread crumbs


Preheat the oven to 450°. Cut the chicken into ½" cubes. Heat a frying pan and add 1 Tbsp. of butter or olive oil. Add the chicken to the frying pan. Season lightly with Italian seasoning and garlic. Cook the chicken thoroughly.

Cook the broccoli until it is tender, but do not overcook. Drain well.

Spray a 9"x13" baking dish lightly with cooking spray. Add the broccoli to the baking dish and spread evenly. Add the cooked chicken and spread evenly over the broccoli.

In a bowl, mix the condensed soup, the milk, the sharp cheddar cheese and the Mrs. Dash seasoning. Mix thoroughly. Pour the mixture over the chicken. Sprinkle the shredded colby-jack cheese over the chicken.

In the frying pan on low heat, melt the butter. Then add the bread crumbs. Stir for a minute or two, until the bread crumbs are coated and the butter is absorbed. Sprinkle the bread crumbs evenly over the chicken mixture.

Place the chicken in the preheated oven and bake for 15 minutes, or until the bread crumbs turn golden brown. Remove from the oven and serve.
